Shop sarnies rarely stretch beyond egg (usually battery) mayonnaise and cheese. So wow everyone by making your own. Liven up your lunchbox with falafel (little, round spicy balls made from chickpeas), hummus, coleslaw, mock-meat slices (ham, chicken, turkey or beef), Redwood fake tuna with egg-free mayonnaise, fake smoked salmon with cucumber, vegetable patés or sandwich spreads - just add salad or crisps for more crunch! Ripe avocado with tomato and black pepper, watercress and Marmite, sliced beetroot and red onion - let yourself loose!
Use your loaf and add your favourites to crusty bread, flavoured breads, ciabatta, pitta pockets, bagels or tortilla wraps. Or pile them on lettuce, rocket, spinach and watercress. For extra zing, sprinkle with Bacos, bacon-flavour soya chips. Or dry roast some pumpkin and sunflower seeds in a saucepan, sprinkle over soya sauce, cool and sprinkle these instead - or dry-roast sesame seeds. More nutrients and taste than you can shake a stick at!
If you’re in a hot mood, bake a potato in the microwave for a few minutes and fill it with any of the above. Most supermarkets now sell ready-made jacket potatoes. And there’s always baked beans, with or without veggie sausages, spaghetti or meat-free ravioli on toast. Even most instant noodles are veggie (but check the label first), so you’re certainly not going to starve!
